"Summer Strawberry & Mixed Greens Salad"
Use All Organic Ingredients:
- 1 head (about 6 cups) Romaine lettuce
- 5 ounces (about 5 cups) Baby Spinach
- 4 cups sliced Strawberries, fresh organic
- 1/4 cup raw Cashews or 2 TBS Raw Cashew Butter
- 1/3 cup unsweetened Soy, Hemp or Almond Milk
- 1 Apple, peeled and sliced
- 2 TBS Dried Currants or Raisins
Assemble the lettuce and spinach leaves on a plate; then arrange the strawberries on top.
To make the Dressing, blend remaining ingredients in a high-powered blender until smooth.
Add ample amounts of the salad Dressing over the greens and berries on each plate & serve.
