Organic Surprise Acorn Squash
Use All Organic Ingredients:
- 1 large Acorn Squash
- 1/4 cup dried Unsulfured Apricots, soaked in just enough water to almost cover until soft, then diced
- 1 1/2 cups Pineapple, roughly chopped
- 2 Tbs Raisins
- 2 Tbs chopped Walnuts
- Cinnamon to taste
Preheat oven to 350 degrees.
Cut the Acorn Squash in half & remove seeds; Bake face down in ½ inch of water for 45 minutes.
While it's baking, combine the Apricots and soaking liquid, Pineapple, Raisins, and Walnuts in a mixing bowl.
When Squash is done, scoop the Apricot/Pineapple/Raisin/ Walnut mixture into the center of each Squash half. Place in baking pan and cover loosely with aluminum foil. Bake for an additional 30 minutes. Sprinkle the Squash halves with cinnamon to taste, then put it back in the oven to finish for 5 more minutes.
